What is blanched almond butter?
In late 2019, we launched a new product in our almond butter line, blanched almond butters. They are available in both extra creamy and crunchy varieties. If you have tried them already, we would love to hear from you, and we invite you to write a review either at our online shop or at our Amazon store. You may have noticed on the front of the label the word “Keto.” It is important to add a note as to why that word is on our label. Once Again Nut Butters does not endorse Keto diets necessarily. We believe individuals must choose to follow a plan that works for them; as the registered dietitian nutritionist for Once Again, I would advise those interested in the Keto diet to consult with their physician before starting a new diet.
What is keto diet? The commonly practiced Keto diet practice includes guidelines to minimize carbohydrate intake. All our nut and seed butters (except for our gourmet line) are low in carbohydrates. They meet the restrictions of the Keto diet and be included daily if one chooses to do so.
To respond to popular demand, our blanched almond butters were launched! Regardless of a specific dietary pattern, over the years, we’ve received requests for a blanched almond product. Blanching almonds involves removing the exterior of the almond leaving behind the surprisingly sweet nut interior, with its lighter texture and color. The almonds are then milled in a double grind process, making the butter creamier than a typical almond butter. The fact that it contains only one gram of carbohydrate per serving makes it very appealing to Keto diet followers attempting to minimize their carbohydrate intake.
Either way, this almond butter’s composition makes for an incredibly versatile ingredient! In the Avocado Almond Mousse recipe below the blanched almond butter blends with avocado to deliver a smooth and delectable mousse. Avocado’s naturally high fat content and low carbohydrate count keep this recipe also within the Keto-friendly parameters. Try adding a spoon of cacao powder for a chocolate version too!
Keto Avocado Almond Mousse

Only three ingredients needed for this keto friendly dessert that is also great for those with diabetes watching their blood sugar levels. Made with avocado and our blanched almond butter.
- ½ of a Hass avocado
- 4 tablespoons of Once Again Blanched Almond Butter
- 1 packet of stevia sweetener or substitute with 2 tablespoons of sugar, or coconut sugar
- 1 tablespoon of unsweetened coconut flakes for garnish
Using a hand mixer or blender combine all ingredients until smooth consistency is obtained. Place in refrigerator for at least one hour; then garnish and enjoy!
