We hope you feel the same way as we do about banana cake and bread recipes! You can never have too many! This one requires a blender only for preparation. Perhaps the necessity for a quick homemade cake was what first got you to click on our new blog and recipe today, but now that you’ve found our recipes let’s talk Once Again Nut Butters. Today’s Blender Banana Cake recipe includes our sunflower seed butter. We produce two kinds: the no-salt and no-sugar version and the lightly sweetened one. For baked treats, we recommend using the lightly sweetened, while for daily use and in savory recipes, try the no -salt, no- sugar variety. They’re both smooth and a fantastic alternative to peanut butter for those who are looking for variety or have an allergy.

Back to the banana cake! If you’re watching your total caloric intake and or saturated fat, feel free to sub the coconut oil for applesauce in a 1-1 ratio. You can also use just 2 eggs and 2 flax eggs (2 tablespoons of ground flax seeds in 5 tablespoons of warm water, let it sit for a few minutes). Lastly, omit the sugar for a healthier version and add an extra teaspoon of cinnamon. Just don’t leave that lemon juice out of the —recipe. Blender Banana Cake

This cake is so easy to make you may find yourself baking it a couple times a week! Delicious treat with an afternoon cup of tea or as a breakfast too.
- 4 eggs
- 3 bananas
- 1/3 cup of coconut oil
- 2 cups of quick oats
2 teaspoons of baking powder
- 2 teaspoons of sugar
- 1 teaspoon of cinnamon
- 2 teaspoons of lemon juice
- 3 bananas for the bottom of the pan
- Add all the ingredients in no specific order to a blender! That’s how easy this is.
- Blend until achieving a cake dough-like texture.
- Prepare a 9X9 square baking pan with non-stick spray and a very light coating of sugar (you may use coconut sugar)
- Then slice the 3 extra bananas lengthwise and place them on the bottom of the pan. Pour cake batter over it and place it in an oven pre-heated to 350 degrees Fahrenheit for 35 to 40 minutes.
- Remove from oven, wait until it cools to slice. Any leftovers should be stored in the refrigerator for up to three days.
