The National Organic Program (NOP) develops, implements, and administers national production, handling, and labeling standards for organic agricultural products. The NOP also accredits the certifying agents (foreign and domestic) who inspect organic production and handling operations to certify that they meet United States Department of Agriculture (USDA) standards.

Organic Peanuts from Argentina, New Mexico and Texas. Organic Almonds from 90% California and 10% Italy. Organic and Natural Sesame Seeds from grower co-ops in Nicaragua. Organic Cashews from Cambodia. Flaxseed: North America Oil Separation Oil separation is a natural occurrence. Peanuts, cashews, almonds, sesame seeds, and sunflower seeds all have oil separation that may occur after they are ground into butter. All of these nut/seeds contain from 50% to 60% oil. The oil is lighter than the ground nuts or seeds so it floats to the top.
Traces of other nuts In the last 20 years or so, the incidence of food allergies has increased significantly. While we do a really good job of making sure our products are separated, there is still a small risk of cross contamination; therefore, we recommend that any person with a health threatening allergy avoid our nut butter products. Aflatoxin Aflatoxin is a chemical created by mold. Some molds are beneficial; such as penicillin. Some molds make food have a wonderful taste such as cheese; and some molds can be dangerous i.e. the aflatoxin mold. Cooking does not destroy aflatoxin. Aflatoxin can occur in peanuts, nuts, dried fruit, corn, and other grains. Only peanuts are tested multiple times by the USDA. Samples are drawn and tested by the FDA at harvest and again after shelling. Peanuts and peanut butter are perhaps the safest of foods to consume if you are concerned about aflatoxin. We make sure that all of our peanuts are tested for aflatoxin before we purchase them. But we don't just rely on that data alone, we also test our peanut butter for aflatoxin after it is produced. Natural vs. Organic The term “natural” has no clear definition. The term “organic” when applied to food can only be used if the food meets all the requirements of the Organic Food Act that was passed by Congress in the early 90’s. Organic covers all aspects of growing a crop including the use of compost, natural fertilizers, and synthetic fertilizers. Restriction in the use of non-approved chemicals is part of the required routine. Processing facilities such as ours must keep organic ingredients in a storage area that does not have chemicals or other pesticides. Certification of farms and processors is required at least once a year or more. Shelf life One year from date of production. Less than 6 weeks after the jar is opened. Why Organic? Organic products are produced without synthetic pesticides and fertilizers. It is our belief that our organic products are a healthier, tastier alternative to the conventional. Research has shown that organic crops, on average, contain higher levels of trace minerals, vitamin C , and antioxidants. Organic farming is also better for our soil, and better overall for our environment. Fair Trade and Sustainability We are committed to ensuring our farmer- partners are receiving a living wage. We support domestic fair trade at home through our local farmer-partners. We are proactive by paying fair prices to our growers and bee-keepers, providing reasonable and fair prices to our customers and healthy food choices for everyone. In addition, we participate in farming projects in foreign countries, such as, Nicaragua. Our projects include fair trade activities, creating growing cooperatives for commodities, such as, sesames, peanuts and honey. We pay US prices for those commodities and are currently working on obtaining our Fair Trade status.
Once Again Nut Butter cares about the environment and you. One of the ways we do this is by packaging all of our nut butters in glass jars. Glass packaging eliminates any health concerns caused from chemical seepage in plastic. Glass jars are also less demanding on our environment and easier to recycle. Glass also extends the shelf life of the product.
Suggested storage If you are going to consume the butter within three months, the cupboard is fine. Use the refrigerator or freezer for up to a year. We give the regular (unstabalized) nut butters a 12 month shelf life from the date of manufacture. This does not mean the butters will go bad after this; rather the problem is with oil separation. Stirring the oil into the butter can be difficult.
Nut Butter Process Our roasters are large convection ovens. We roast at a temperature of about 300°F. We test for proper roast by color. The nuts or seeds are cooled quickly and moved to a bin over the mill. The mill is physically a modern version of the stone flour mill of old. We add any additional ingredients such as salt, sugar, or organic palm fruit oil into the mill with the nuts or seeds. WE DO NOT ADD ANY INGREDIENTS THAT ARE NOT LISTED ON OUR LABEL. The butter is then pumped to the filler. The whole process from raw nut or seed, to ready to ship, can often take less than an hour.
Natural Peanuts from Virginia and North Carolina. We do not import any peanuts from China!
Natural Almonds from California and are pasteurized.
Natural Cashews from Brazil and Vietnam.
The national brand peanut butters do not separate because they use hydrogenated oil to stop separation. All hydrogenated oil contains trans-fats. If the actual level of trans-fats is below .50 the product label may read zero trans-fats. Specifically, the rule for trans fats is less than 0.50 may be declared as zero on the product label. What this means is that your typical nut butter product may declare zero trans fats, but actually contains up to and including .49 trans fats. Once Again Nut Butters have no trans fats, whatsoever, so enjoy!
Nut Butter Ingredients Our recipes are surprisingly simple. We add a small amount of organic sunflower oil to the cashew butter to make it spreadable. The Organic American Classic Peanut Butter has salt, sugar, and organic palm fruit oil added to the organic peanuts. The Organic Sunflower Butter has salt and sugar added to the organic sunflower seeds. Otherwise, we just use ground nuts or seeds. We only use what is clearly stated on each of the products' ingredient label.
