Cashew and Honey Nut Butter Fruit Muffins

 

2    cups whole wheat pastry flour

1 ½ Tbs. baking powder

½    cup Cashew Butter

2     eggs

4     Tbs. honey

¾    cup milk

½    cup fresh or frozen fruit

1     8 oz. jar fruit jam

          nutmeg

 

Preheat oven to 375 degrees.  Coat muffin tins w/oil.  Combine flour & baking powder.  Combine nut butter, eggs, honey & milk.  Add flour mixture & mix well.  Fold in fruit.  Fill tins ¾ full.  Put tsp. of jam on top & swirl through batter with toothpick.  Sprinkle top with nutmeg.  Bake for

20 minutes or until browned.

Cashew Oatmeal Drops

 

1 ½    cups rolled oats

¼       cup Cashew Butter

¾       cup chopped cashews

½       cup honey

1        teaspoon cinnamon

1        egg

½       cup raisins (optional)

 

Blend all ingredients in order given.  Drop from teaspoon on oiled baking sheet.  Bake at 350 degrees for 12 minutes or until browned.


Ellen's Honey Popcorn Balls

3 qts. popped corn (12 c.)
1/2 c. sugar
1/2 c.
honey
1 tsp. salt
2 tbsp. margarine
1 tsp. vanilla


Directions:

Popcorn and set aside in a large bowl. Combine sugar, honey and salt in a small saucepan. Heat and stir to dissolve sugar. Boil to hard ball stage (when a drop forms a hard ball in cool water). Add margarine and vanilla. Pour syrup over popped corn and stir. Butter your hands and shape into balls. Wrap balls with waxed paper.

Miso-Honey Glazed Salmon

Once Again Dawes Hill Killer Bee Pure Raw Organic Honey

Serves 6

 

Ingredients:

6 salmon portions, 6 oz each

¼ cup Once Again Dawes Hill Killer Bee Pure Raw Organic Honey

¼ cup white miso paste

2 tbsp fresh orange juice

1 tbsp rice vinegar

2 tsp soy sauce

 

1.       Preheat the broiler.  The rack should be in the middle of the oven so the salmon is about 6 to 8 inches away from the heat while cooking.

2.       Whisk together the honey, miso paste, orange juice, soy sauce and rice vinegar.

3.       Place the salmon in an oven-safe dish.  Cover well with the glaze.

4.       Roast the salmon under the broiler for 10-12 minutes, until the salmon is cooked through and the glaze is lightly caramelized.  Use a pastry brush to baste the salmon with the reduced glaze from the bottom of the dish about halfway through cooking.

5.       Remove from the oven and serve immediately.

4        tablespoons honey

¾       cup milk

1        8oz. jar fruit jam

          nutmeg

Bake at 375 degrees for 20 minutes or until browned.
